Breakfast Cookies From Molasses

My family is giving up sugar this year, but if I just cleaned the shelves and said that we would never again have cookies, there would be a rebellion.

I’m preparing delicacies like cookie dough hummus because of this.

They employ organic sweeteners like maple syrup and honey and are high in protein to reduce your sugar cravings.

Fortunately, I’ve come up with an excellent recipe for molasses breakfast cookies, so we can indulge guilt-free!

Don’t you Think it’s Only Right to Provide Sugar-Free Cookies for Breakfast?

Even if neither of these recipes calls for sugar, we can still have protein pancakes and peach breakfast crumble, but eating cookies for breakfast simply seems more entertaining.

Strangely, the flavor of molasses in breakfast cookies is not particularly molasses-like.

These breakfast cookies don’t include any ginger, and I’ve never eaten a gingersnap, but Mr. Crumbs claimed they tasted similar to them.

He said that they weren’t particularly sweet. nevertheless, isn’t that the point? They are just sweet enough to taste wonderful but not too sweet to count as a healthy breakfast.

(And it’s clear they were tasty enough since he took a couple more as he left the kitchen.)

After eating one cookie, the Girl requested another. She will eat anything if you name it a cookie.

I will confess, but she is also the one that will only eat anything if it tastes delicious.

Benefits Found in it

Avena Flour Oats

are wonderful and incredibly healthy, but oat flour is the real deal. Making your oat flour in a blender gives any dish an immediate boost of crunch and texture.

Complete Grain Flour

Only because the gluten made the cookie less crumbly and a little softer are we using even the slightest amount of flour in this recipe. You may use any flour you have in the cupboard; I just used whole wheat flour.

Ground Flaxseed

This incredible food performs three major functions: it serves as part flour, part flavoring, and part MEGA nutrients. One of the MANY incredible ways to utilize milled flaxseed is as part of the flour since it has a significant amount of protein and fiber.

Oil of Coconut

Are you using coconut oil yet? Come on, friends, “because it makes molasses breakfast cookies taste great” should be at the top of the list of reasons to consume more coconut oil.

Molasses

Ta-da! Nothing but molasses is where the molasses breakfast cookies begin! You cannot omit the molasses in this recipe; it serves as both a sweetener and a taste.

Make an effort to use black strap molasses to ensure that you also receive all of the micronutrients. You can also use it to produce homemade brown sugar, so if you don’t already have it, grab it now.

Even if it sounds unusual, molasses breakfast cookies may give you the impression that you are traveling through time.

I was immediately transported back more than 20 years to my early years, where I was surrounded by the smells and scents of the Christmas and Thanksgiving seasons.

Recipe

Is that pumpkin bread I’m eating? perhaps gingerbread? When neither pumpkin nor ginger is used in the dish, how could I possibly believe I was eating either?

These morning cookies are a staple in my breakfast routine, thus I dub the molasses to be the culprit.

Ingredients

  • 2 eggs
  • A third cup of room-temperature coconut oil
  • 2 tablespoons of honey
  • Molasses, 1/3 cup
  • 1 teaspoon vanilla
  • One cup of ground flaxseed
  • 1 cup of oats in a blender, crushed into flour
  • A half-cup of whole-grain flour
  • 2 teaspoons baking powder
  • The ground cinnamon, 1/2 tsp
  • Ground nutmeg, 1/4 teaspoon
  • Achieve a 350°F oven temperature

Instructions

Combine the eggs, coconut oil, honey, molasses, and vanilla in a large dish or the bowl of a stand mixer and stir until thoroughly blended.

Oat flour, whole grain flour, baking powder, cinnamon, and nutmeg should all be added at this point.

While you prepare a cookie sheet by lining it with a Silpat mat or gently greasing it, let the dough rest for about 5 minutes.

Leaving space for expansion, spoon biscuits onto the baking sheet. Until the edges are just a little bit darker, bake for 12 minutes.
