Vijayawada Chicken Biryani Ingredients

  • 1 kg Boneless Chicken
  • 3 cups Basmati rice
  • For Marinating
  • 1 tbsp Ginger-garlic paste
  • 1½ tbsp Chili powder
  • 1 tsp Turmeric powder
  • 1/2 tbsp Coriander powder
  • 2 tsp Garam masala
  • Salt to taste
  • 1 Egg
  • 4 tbsp Curd
  • 2 tbsp Lemon juice
  • For Frying
  • Vegetable Oil as required
  • 1/2 cup Peanuts optional
  • 2 tsp Corn Flour
  • 4 tbsp All-purpose flour
  • For the gravy
  • 2 tbsp Vegetable oil
  • 1 tbsp Ghee
  • 2 medium Onions chopped into small pieces
  • 1 tsp Shahi jeera
  • 1 tsp Fennel seeds
  • 1 tbsp Ginger-garlic paste
  • 4 green chilies
  • 3 big Tomatoes pureed
  • 1 tsp Turmeric powder
  • 1½ tsp Garam masala
  • 1 tbsp Chilli powder
  • 1/2 tbsp Kashmiri Chilli powder
  • 1/2 tbsp Coriander powder
  • 1/2 cup Curd
  • 1/2 cup warm water
  • 2 tbsp Lemon juice
  • Salt to taste
  • 1 handful of Cilantro chopped
  • For layering
  • 1/2 cup Fried onions
  • 1/4 cup Saffron water
  • 2 tbsp Ghee
  • Cilantro chopped handful

Marinated Chicken

Place all ingredients for marinating chicken in a large bowl with chicken. Mix well and spread the marinade evenly over the chicken.

Refrigerate chicken for at least 7 hours, preferably overnight. Roast meat.

After 7 hours, remove the chicken from the refrigerator and add cornstarch and all-purpose flour. Mix them well to coat all the chicken.

When fully covered, pour enough oil into the wok and fry the chicken in separate batches. Once fried, remove the chicken and arrange it on a paper napkin-lined plate to drain the oil. After roasting the chicken, roast the peanuts and set aside.

For Curry Sauce

Put salad oil and ghee in a pan and heat over medium heat. Add the chopped onion and stir well. Add fennel seeds and shahi jeera and keep stirring.

Then add ginger-garlic paste and green chilies to this mixture and keep stirring.

Add tomato puree and mix well. after that add turmeric, garam masala, Kashmiri chili powder, coriander powder, and salt to the pan. Keep stirring until the masala is no longer fishy.

Add lukewarm water, cottage cheese, and coriander and stir well. When the sauce begins to boil, add the fried chicken pieces and stir well. Add fried peanuts and sprinkle with lemon juice.

Mix well and simmer over low heat for another 10 minutes. Remove from stove and set aside.

Layering

Cook basmati rice with whole spices until par cooked. Take a thick-bottomed biryani cooker and pour ghee on the bottom.

Put the cooked rice on top of it and spread it roughly on the base.

Place the chicken on top of the rice and then the sauce. Next, spread the coriander and fried onions and cover with another layer of rice.

Pour 2 tablespoons of saffron water over the cooked rice and add the chicken and sauce.

Then add the leftover cilantro and fried onions.

Cover the cookware with aluminum foil and close the lid. Cook over medium-low heat for about 25 minutes until steaming.
