We are going to be making a lot of your childhood favorites into a healthier version and it isn’t stopping with these almond bars. In fact – I have a list on my phone of all the ice creams we are going to recreate.
I was shaken over how many requested Toasted Almond Ice Cream Bars though so I hope you guys love these. We are obsessed over here!
I use 3 simple ingredients to make these: vanilla ice cream, raw almonds, coconut sugar, and butter/oil.

What Ingredients do You Need to Make Toasted Almond Ice Cream Recipe?
Pint of vanilla ice cream – can use vegan ice cream if preferred! I used a traditional vanilla ice cream from the store.
Raw almonds – I like to buy organic/raw and toast them myself but you could buy toasted almonds too.
Coconut sugar – you will add this to the almonds when you toast them to sweeten the ice cream pops.
Butter or oil – either work and you just need some to grease the pan for the almonds/sugar. I have also written an article on Delicious and Nutritious Almond Flour Peanut Butter Cookies.
Method
Let the ice cream thaw out for a few minutes then begin scooping and pressing into each ice pop mold (I made 4) and spread across with a spatula so it is smooth insert popsicle sticks
Add to the freezer to set for at least 3-4 hours or overnight
Next, take almonds and add them to a food processor, and pulse to break them up into crumbs (be sure not to pulse or you will get a meal) you can also just chop with a knife
Warm a large skillet with butter then add the almonds and coconut sugar and mix and toast on medium/low heat for about 5-10 minutes, mixing every minute or so
Remove from heat and add to a plate or shallow bowl
Remove ice pops from the freezer and gently take out of the mold and cover them in the almond mixture and add to a baking sheet, pressing down the almonds so they stick
Add back to the freezer to set for at least 15 minutes and store in the freezer until ready to eat!

Loaf Pan – You can use any 9 x 13 loaf pan or a shallow pan, but we like this one.

Ice Cream Bowls – You can use any bowl, but we think these are fun.
Ice Cream Containers – We love keeping a couple of ice cream containers on hand for when we make homemade ice cream.
