This quick Danmuji is used to eat with rice vinegar and black peppercorns. Turmeric is the main ingredient of this recipe which gives it a yellow color.

Korean Pickled Daikon Radish

Ingredients

  • One Daikon Radish
  • One and a half tablespoon salt (One for the Radish and half for the broth)
  • Half a teaspoon of turmeric powder
  • Half cup sugar
  • One and a half cup water
  • One cup of rice vinegar

Directions to Make Korean Pickled Daikon Radish

  • Take daikon radish and take off its skin. Cut the daikon radish according to the length of your container.
  • Cut the radish into half-inch wide strips or you can cut it into the moon shape slices also.
  • Put the radish in a big bowl, sprinkle salt on the radish, and set aside to marinate for almost 25-30 minutes.
  • In the other saucepan, add salt, sugar, and turmeric powder and bring it to a boil. Cook until all the sugar has dissolved. Turn off the flame. Add rice vinegar and put aside.
  • When the radish strips or slices have been marinated. Take out all the extra water from the marinated radish. Put down the radish in a safe and clean container.
  • Add the turmeric, salt, and vinegar mixture with the radish.
  • Wait for it to cool, cover the pan, and put it in the refrigerator for a night before using it.

Note: This homemade pickle can last for 1 month.
