2 tsp vegetable oil

8 oz gluten-free chicken breakfast sausages, casing removed

9 eggs

½ tsp salt

¼ tsp pepper

1 cup shredded Monterey Jack cheese (about 4 oz)

6 tbsp prepared salsa or pico de gallo sauce

¼ cup chopped pickled jalapeño pepper

¼ cup chopped cilantro

Heat the oil in a nonstick skillet over medium-high heat. Mincemeat and cook sausages for 6 to 8 minutes or until browned and fully cooked.
