Spicy Kohlrabi Noodles
First, I am telling you the recipe for delicious, gluten-free Kohlrabi noodles.
Ingredients
- Three kohlrabi
- Cooked rice noodles
- Half jalapeno
- Some red chilies
- Half avocado
- herbs: cilantro, basil, or mint
- crushed peanuts
- Sriracha or chili sauce
- lemon
For Seasoning
- one lemon juice
- two tablespoons of soy sauce
- two tablespoons of rice vinegar
- one clove of garlic crushed
- one teaspoon of crushed ginger
Direction to Cook
- Mix the seasoning together
- Peel the kohlrabi (if you like it without its skin)
- Cut the kohlrabi first into thin slices and then into thin matchsticks
- Marinate the kohlrabi with the seasoning and set aside for 30 minutes
- Mix the marinated kohlrabi with noodles, avocado, cilantro, basil, mint, and sriracha sauce

Kohlrabi Noodles with Bacon and Parmesan
It is another kohlrabi recipe topped with bacon, onion, and parmesan. You won’t regret trying this recipe. It is used as a side dish.
Ingredients
- three kohlrabi peeled
- four slices of bacon
- one tablespoon of olive oil
- salt to taste
- two tablespoons butter
- one-third cup of grated cheese
- two tablespoons crushed fresh parsley
Directions to Make
- Cut kohlrabi into thin noodles
- Heat a pan on a medium-high flame. Cook bacon and onion until golden brown
- Take bacon and onion and transfer them to a small bowl. Reserve 1 tablespoon of bacon grease in the pan
- Then, add bacon to the pan and season with salt. Cook noodles on a medium-high flame, and stir continuously. Until they soften. It gets softened in 14 to 15 minutes
- Add butter and melt it. Add in the bacon and onion mixture and stir in half the parmesan cheese
- Top it with the remaining cheese and parsley. Serve immediately
Roasted Vegetables and Kohlrabi Noodles with Peanut Butter
Ingredients
First, make peanut butter
- one piece of ginger
- one clove of garlic
- half a cup of peanut butter
- three tablespoons soy sauce
- three tablespoons of vinegar or lemon juice
- three tablespoons water
- two teaspoons of maple syrup
- one teaspoon of sesame oil
For the bowls
- one pack tofu
- one tablespoon of soy sauce
- kosher salt
- black pepper
- two broccoli
- carrots
- half a cup of basil leaves
- half a cup of unsalted peanuts
- two spring onions
- two tablespoons of avocado or olive oil
- kohlrabi noodles
- one cup shelled edamame
- one-fourth cup of unsweetened coconut flakes
Directions to Make
First, make peanut butter
- Grate one piece of ginger and one piece of garlic. Put it on a medium size platter
- Add half a cup of pure peanut butter, three tbsp of soy sauce, and vinegar
- Add three tbsp water, two tsp maple syrup, and one tsp sesame oil
- Mix the sauce with a whisk. If necessary add water.
For the bowls
- Heat the oven to 425°F and set up two racks to divide it into 1/3. Use tissue paper to line a baking sheet with a rim
- One box of extra-firm tofu should be drained before being wrapped in many layers of paper towels and placed on a dinner plate. While the oven is heating, press it down with a large weight like a saucepan, and let it drain
- Take broccoli and cut the ends, Then, peel the carrots then cut them into 1/4-inch thick slices. Chop finely 1/2 cup fresh basil, 1/4 cup unsalted peanuts, and spring onions into thin slices
- Place the tofu on the baking tray after breaking it up into bite-sized pieces. Add 1 spoonful of the ketchup and 2 tsp of the peanut sauce. Sprinkle with salt and black pepper
- Roast on the top rack for 15 minutes. The tofu should be roasted for an additional 15 minutes after being turned. Put the broccolini and carrots on a second baking sheet in the meantime
- Sprinkle with salt and black pepper, and spray with 2 tbsps avocado or olive oil. Place in a single layer and roast for about 15 minutes on the lower rack, or until cooked and nicely browned
- Before serving, distribute the kohlrabi noodles into four dishes along with the chopped basil. Add 1 cup of edamame, broccolini, carrots, and tofu to the top. Add a final drizzle of peanut sauce. Add the scallions, peanuts, and 1/4 cup of toasted coconut flakes as garnishes
