Three Bean Salad With Chicken of Sea Sardines
This hearty dish is like a cross between a classic Greek salad (feta cheese, cucumber, kalamata olives) and his three-bean salad (black beans, chickpeas, kidney beans). Try it with a crisp baguette and also chilled white wine for the perfect summer meal.
Ingredients
For Sardines Dressing
- 1 (3.75 oz) can Chicken of the Sea Sardines in Lemon and Extra Virgin Olive Oil
- 1 clove garlic, minced
- 1/4 cup olive oil
- 2 Tablespoons lemon juice
- 2 Tablespoons apple cider vinegar
- 1/2 teaspoon salt, or to taste
- black pepper, to taste
For Salad
- 15 oz. canned black beans, drained and rinsed
- 15 oz. canned garbanzo beans, drained and rinsed
- 15 oz. canned kidney beans, drained and rinsed
- 1 medium cucumber, chopped
- 1 cup cherry tomatoes, halved or quartered
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh herbs (parsley, basil, or dill)
- salt, to taste
- black pepper, to taste
Directions
- Prepare the dressing: Pour the juice from the canned sardines into a small bowl
- Add garlic, olive oil, lemon juice, vinegar, salt, and pepper, and mix
- Gently break the sardines into small pieces and add them to the vinaigrette, set aside
- In a large bowl, combine black beans, chickpeas, kidney beans, cucumbers, cherry tomatoes, feta cheese, and herbs
- Pour the sardine dressing over the salad and toss lightly before serving

Summer Sardines Pasta Salad
A colorful pasta salad with a zesty Italian dressing and tomato, fragrant sardines, and fresh summer basil.
Ingredients
- 1 can (3.75 ounces) Chicken of the Sea Sardines in Water
- 4 ounces rotini pasta (or whatever your favorite short pasta shape is)
- 3/4 cup halved cherry tomatoes
- 3/4 cup mini mozzarella pearls
- 1/4 cup diced red onion
- 1/4 cup diced banana or yellow bell pepper
- 1/2 cup sliced black olives
- 2 tablespoons minced fresh basil
- 1/4 cup dressing
Directions
- Start by cooking the noodles according to package directions, then drain and rinse in cold water to prevent cooking and sticking
- Combine all ingredients except sardines and dressing in a large bowl
- Once mixed, add the dressing and mix
- Drain the water from the sardines, tear them into 3-4 pieces, and add them to the pasta salad. Serve immediately
