My family and I make this salad every summer! I always have fresh cucumbers, tomatoes, and parsley in my garden, so this is an easy side dish for almost anything! I like to add canned, drained tuna for extra protein and some chickpeas! What I love about this salad is its versatility.
Ingredients
Cucumbers
I used garden cucumbers, but English cucumbers will also suffice. Thinner and less watery than regular cucumbers, which I like.
Avocado
Use a total of 2 diced. They should be fully ripe. That is, not too hard and without black spots.
Parsley
I like fresh parsley, and I usually have it on hand in the summer, but dried parsley is fine if you’re in trouble.
Lemon Juice And Olive Oil
This avocado salad recipe works together to create a light vinaigrette used to flavor the vegetables. If you prefer, you can substitute white vinegar, red vinegar, or apple cider vinegar for lemon juice, and olive oil for avocado oil.
Roma Tomato
I chose it because I like the texture and sweetness, but feel free to use whatever tomatoes you like. Cherries and grapes also work well.
Red Onions
I like red onions for their sour and sweet taste which goes well with avocados, cucumbers, and tomatoes, but you can use white or sweet ones if you prefer.
Salt And Pepper
Taste it, but don’t overdo it!

English Cucumbers
You can use any kind of cucumber in this avocado-his salad recipe, but I prefer long English (or seedless) cucumbers. It has thin skin and tends to have few seeds, making it a perfect complement.
You can peel the English cucumber if you like, but it is not necessary.
Other – When using wild cucumbers, they often have thick skin, so you can peel them and scoop out the seeds with a spoon if desired.
Avocado
Dice the avocado and mix immediately with a little lemon juice. This will keep it from browning (and add flavor). Use fresh lemon juice, as this recipe relies heavily on the taste of fresh ingredients. Bottled juices can have a bitter aftertaste. dressing
Depending on the size of the cucumber and avocado, you may not need all the dressing.
If you have leftovers, you can put them in salads, and you can store them in the refrigerator for about a week!
Onion
I love the flavor (and a bit of color) of red onions add to this cucumber and avocado salad. Of course, if you don’t have red onions, you can add sweet white onions. Use white-skinned onions (not your typical yellow onion). Sweeter and milder.
To remove the “bite” from the onions (and soften them), soak the onions in cold water while you prepare the cucumbers and avocados. Optional of course!
Variations of Avocado Cucumber Salad
- Change some ingredients! Substitute cherry or grape tomatoes for Roma tomatoes, and white or sweet onions for red onions
- Add protein! Serve with grilled shrimp or diced grilled chicken, or serve the avocado salad over grilled salmon
- Add cheese! Mix in mozzarella balls, crumbled goat cheese, or crumbled feta cheese for a mouthful or creamy dish
- Add more vegetables! Sliced zucchini, squash, or eggplant work well here, as do diced bell peppers, rinsed chickpeas, or shelled corn. Sprinkle with diced jalapeno peppers or dried cayenne pepper. and add spices
- Add fruit! A diced mango or pineapple works best here
- Herb Exchange! Fresh dill, basil, oregano, or rosemary will all be delicious here. In the summer, add basically whatever herbs you have in your garden. The more herbs, the better!
- Replace lemon juice with lime juice or use a combination of both
