- 2 cups of conventional (or traditional) oats
- ½ cup applesauce

- ¼ tsp salt
- Two eggs
- 1 tsp vanilla

- After allowing the muffins to cool in the pan on the cooking rack for two minutes, remove them from the muffin tin and place them on the cooking rack. Come to room temperature

Check that your baking soda and powder have not passed their expiration dates! While testing this recipe for the first time, I noticed that my baking powder had turned into a sort of cake, and I was down to the last bit. The muffins hardly expanded in volume at all.
